  • 12 corn tortillas
  • 6 eggs, beaten
  • 2 green onions, chopped (both white and green parts) - reserve chopped green stem for garnish
  • 1 clove garlic, peeled and grated
  • 1 cup diced red, yellow and orange bell peppers
  • 2 ounce chopped fresh mushrooms
  • 1 zucchini, grated
  • 1 carrot, peeled and grated
  • 1 jalapeno pepper, seeded and finely diced
  • 2 radishes, grated
  • 2 ounce baby spinach, finely chopped
  • 1/4 cup minced fresh cilantro plus 1/4 cup of cilantro leaves, picked from stems (for garnish)
  • 1 tablespoon coconut oil
  • 1/2 teaspoon turmeric
  • 1/2 teaspoon paprika
  • 1/2 teaspoon ground cumin
  • oshredded cheddar cheese, for garnish
