Ingredients
- 16 slices whole grain bread, crusts removed
- 16 slices turkey bacon
- 16 slices reduced-fat sharp cheddar cheese
- 6 eggs or equivalent egg substitute
- 1/2 teaspoon salt
- 1/2 teaspoon pepper
- 1/2 teaspoon dry mustard
- 1/4 cup onion, finely chopped
- 1/4 cup green pepper, finely chopped
- 1 to 2 teaspoons Worcestershire sauce
- 3 cup skim milk
- 1 dash Tabasco sauce
- 1/2 cup butter or butter substitute
- crushed corn flakes
Instructions
- Preheat oven to 350 degrees F. Lightly coat the bottom of a 9x13-inch glass baking dish with non-stick cooking spray.
- Arrange 8 bread slices in dish evenly. Cover bread with slices of turkey bacon. Lay slices of cheddar cheese on top of bacon and then top with remaining slices of bread to make sandwiches.
- In a medium-sized bowl, beat eggs, salt, and pepper. Add dry mustard, onion, green pepper, Worcestershire sauce, milk, and Tabasco. Pour the egg mixture over the sandwiches, cover with plastic wrap, and refrigerate overnight.
- In the morning, melt butter and pour over the top of the casserole. Sprinkle crushed corn flakes evenly over the casserole.
- Bake uncovered at 350 degrees F for 1 hour. Cool for 10 minutes before serving.
