Ingredients
- 1 cup Egg Beaters
- 2 tablespoon almond milk
- 1/2 pound ground lean turkey sausage
- 1 cup reduced-fat Mexican shredded cheese
- 4 whole wheat tortillas
- 2 tablespoon green onions, chopped (optional)
Instructions
- Scramble Egg Beaters with almond milk.
- In a large pan, over medium-high heat, crumble sausage; cook until brown.
- Combine with cheese and cook on low until cheese melts.
- Warm tortillas in microwave on medium for about 30 seconds until soft enough to roll up without cracking.
- Place about 1/4 cup egg mixture in tortilla and roll up.
- Place tortillas on a serving dish, sprinkle with green onions, and serve with salsa if desired. You can also wrap this in foil to take with you!
