- 2 tablespoon light vegetable oil
- 1 large onion, chopped
- 2 cloves of garlic, minced
- 4 large potatoes, cubed
- 1 pound lean smoked sausage, cut into cubes
- 4 ounce green chiles, chopped
- 1 can whole kernel corn, drained and rinsed
Instructions
- Heat the light oil in a Dutch oven. Then, cook the onion and garlic until tender.
- Add the potatoes and cook, uncovered, over medium heat for about 20 minutes. Be sure to stir the mixture occasionally.
- Add the sausage and then cook until potatoes are tender and well browned, about 10 minutes more.
- Incorporate the chilies and corn into the dish, and then cook until everything is heated through.
