Ingredients
- 1/2 cup margarine
- 1/2 cup light vegetable oil
- 1 3/4 cup sugar, or equivalent sugar substitute suitable for baking
- 1 teaspoon vanilla extract
- 1/2 cup skim milk, with 1/2 tablespoon lemon juice stirred in
- 2 eggs, or equivalent egg substitute
- 2 1/2 cup whole wheat flour
- 1 teaspoon baking soda
- 4 tablespoon unsweetened cocoa powder
- 2 cup zucchini, shredded
- 1/4 cup dark chocolate chips (optional)
- 1/2 teaspoon cinnamon
- 1/2 teaspoon ground cloves
Instructions
- Preheat oven to 325 degrees F.
- Thoroughly mix together the margarine, oil, sugar substitute, vanilla, skim milk-lemon juice mixture and eggs.
- Add whole wheat flour, baking soda, cinnamon, cloves and cocoa; mix well. Fold in the shredded zucchini.
- Put batter into two loaf pans sprayed with cooking spray.
- Sprinkle 1/4 cup dark chocalate chips on top of each loaf before baking.
- Bake for 1 hour, or until a toothpick comes out clean.
