Ingredients
- 4 cup frozen hash browns
- 3 tablespoon olive oil
- 1 pinch black pepper
- 1 pound extra lean ground beef
- 1 cup water
- 1 3/4 ounce low sodium gravy mix
- 1/2 teaspoon garlic salt
- 1 cup low fat cheddar cheese, shredded
- 1 can fried onions
- 10 ounce frozen mixed vegetables
Instructions
- Preheat oven to 400 degrees F.
- Combine frozen hash browns, olive oil, and black pepper in a 9x13 inch casserole dish. Press around bottom and sides. Bake for 15 minutes.
- Brown beef; drain.
- Stir in low sodium gravy, water, and garlic salt; boil.
- Add frozen mixed veggies; reduce heat, cook 10 minutes.
- Stir in 1/2 cup cheddar cheese and 1/2 can fried onions and place in potato shell.
- Reduce oven heat to 350 degrees F and bake uncovered for 15 minutes.
- Sprinkle with remaining cheese and onion; bake for an additional 5 minutes.
