Beefy Thai Casserole

Ingredients
- 2 teaspoon light oil
- 1 pound lean beef leg or another type of lean tough meat
- 1 large onion, chopped
- 2 teaspoon fresh ginger, grated
- 1 teaspoon chilli, minced
- 1 teaspoon garam masala or curry powder
- 1/2 can low sodium beef consomme
- 1 3/4 cup water
- 3/4 cup dried coconut, chopped very fine
Instructions
- Heat the oil in a frying pan, then cube and brown the beef over a high heat. Place on casserole dish.
- Add onion, ginger and chilli to the pan, cook 3 - 4 minutes.
- Combine garam masala, consomme, water and coconut.
- Add to the onion mixture. Bring to the boil, stirring constantly, then pour over the beef. Cover the casserole.
- Cook at 325 degrees F for 1 1/2 hours or until beef is tender. Serve with brown rice.
