- 1 large (8 ounce) baking potato, peeled
- 3/4 cup skim milk or evaporated skim milk
- salt, to taste
- 1/4 cup reduced fat provolone cheese, shredded
Instructions
- Preheat oven to 350 degree F.
- Slice potato into 1/8-inch rounds.
- Lay the potato slices in the bottom of a 9-inch round pan in a single layer, overlapping the edges.
- Pour the skim milk over the potatoes and sprinkle lightly with salt.
- Bake, uncovered, for 40 to 50 minutes, or until the potatoes are tender and most of the milk has been absorbed.
- During the last 5 minutes of baking, sprinkle the potatoes with the reduced fat provolone cheese.
