Ingredients

  • 1 large (8 ounce) baking potato, peeled
  • 3/4 cup skim milk or evaporated skim milk
  • salt, to taste
  • 1/4 cup reduced fat provolone cheese, shredded

Instructions

  1. Preheat oven to 350 degree F.
     
  2. Slice potato into 1/8-inch rounds.
     
  3. Lay the potato slices in the bottom of a 9-inch round pan in a single layer, overlapping the edges.
     
  4. Pour the skim milk over the potatoes and sprinkle lightly with salt.
     
  5. Bake, uncovered, for 40 to 50 minutes, or until the potatoes are tender and most of the milk has been absorbed.
     
  6. During the last 5 minutes of baking, sprinkle the potatoes with the reduced fat provolone cheese.
