Ingredients
- 1 1/2 pound extra lean ground beef
- 3/4 cup onion, chopped finely
- 1/3 cup low sodium Saltine cracker crumbs
- 2 egg whites, slightly beaten
- 3 tablespoon skim milk
- 1 tablespoon chili powder
- 3/4 teaspoon salt, or to taste
- 3 cup homemade mashed potatoes
- 1 can whole kernel corn with red and green peppers, drained (about 11 ounces)
- 1/4 cup green onions, thinly sliced
- 3/4 cup reduced fat taco seasoned cheese, shredded
Instructions
- Heat oven to 375 degrees F.
- In large bowl, combine ground beef, onions, saltine crackers, egg whites, skim milk, chili powder and salt, mixing lightly but thoroughly. Gently press into bottom of 9 inch square baking pan.
- Bake 20 to 25 minutes or until no longer pink and juices run clear. Carefully pour off drippings.
- Meanwhile in medium bowl, combine mashed potatoes, canned corn mixture and green onions. Spread over meatloaf to edges of pan and sprinkle over top with cheese.
- Broil 3 to 4 inches from heat for 3 to 5 minutes, or until top is lightly browned. Cut into 6 rectangular servings.
