Ingredients
- 1 1/2 pound extra lean ground beef
- 4 zucchini, sliced
- 1 onion, chopped
- 4 tablespoons margarine
- 1 cup carrots, grated
- 1 cup light sour cream
- 1 can Campbell's Healthy Request cream of chicken soup
- 1 box Stove Top Low Sodium Stuffing mix, prepared according to package directions
- 1 box of herb-seasoned croutons
Instructions
- Preheat oven to 350 degrees F.
- In a large skillet, brown the extra lean ground beef; drain the fat.
- Sauté zucchini and onion in the margarine.
- Mix together the ground beef, zucchini and onion mixture, carrots, light sour cream, cream of chicken soup, and Stove Top Lower Sodium stuffing.
- Place in 9x13 inch casserole dish.
- Top with croutons and bake for 1 hour.
