Low Fat Cheese and Chicken Casserole

Ingredients
- 2 tablespoon butter substitute
- 1 tablespoon unbleached flour
- 1 green pepper, chopped fine
- 16 ounce chopped mushrooms
- 1/4 ounce can of chopped pimento
- 2 cup skinless chicken, chopped and cooked
- 1 cup skim or 2% milk
- 1 can low sodium cream of mushroom soup
- 1 can low sodium cream of chicken soup
- 1/2 pound low fat cheddar cheese, grated
- 1 package of spaghetti (wheat or regular)
Instructions
- Saute green pepper in butter substitute and add unbleached flour, mushrooms, and pimento.
- After light cooking, add both cans of soup, fat free milk and 1/2 of the low fat cheese. Cook until hot and bubbly, then add the skinless chicken.
- Cook the spaghetti and put into a lightly sprayed baking dish. Pour sauce over the noodles and mix well.
- Bake at 350 degrees F for 1 hour or until lightly browned. Add rest of cheese and bake until melted.
