Wheat Breaded Chicken Casserole

Ingredients
- 2 cup cooked boneless skinless chicken, chopped
- 6 slices of whole wheat bread
- 1/2 cup red onions, chopped
- 1/2 cup fresh celery, chopped
- 1/2 cup light or fat free mayonnaise
- 2 tablespoon pimento
- 2 eggs, beaten
- 1 1/2 cup fat free or 2% milk
- Salt, to tate
- 1 can low sodium cream of mushroom soup
- 3/4 cup low fat cheese, grated
Instructions
- Dice 2 slices of wheat bread and place at the bottom of the casserole dish.
- Mix onion, celery, pimento, skinless chicken, salt and fat free mayonnaise. Spoon mixture on top of bread.
- Dice remaining 4 slices of bread and place on top of chicken mixture. Mix milk and eggs and pour over casserole.
- Place in refrigerator for 1 hour or overnight.
- Preheat oven to 325 degrees F.
- Before baking, spoon low sodium mushroom soup over casserole.
- Bake 1 hour at 325 degrees F. Sprinkle cheese over casserole after 55 minutes and allow to melt for the last 5 minutes of cooking time.
