Campbell's Chicken Tetrazzini

Ingredients
- 2 large skinless boneless breasts, cut into 1-inch pieces
- 1 large (family size) can Campbell's Cream of Chicken Soup
- 2 tablespoon olive oil
- 1/2 pound fresh mushrooms, sliced
- 2 tablespoon onion powder, or 1/2 medium onion, chopped
- 1/2 pint evaporated skim milk
- 1/2 cup skim milk
- Salt & pepper, to taste
- 1/4 cup grated reduced fat Parmesan cheese, plus some for topping
- 8 ounce dry whole wheat pasta of your choice (penne works well)
Instructions
- Preheat oven to 375 degrees F.
- In a large skillet, saute onion and mushrooms. Add chicken and cook until white; drain and set aside.
- In a large pot. bring to a boil enough water to cover the pasta; add the pasta and cook until al dente and drain.
- Meanwhile, in a large bowl, combine, soup, cream, milk, salt and pepper.
- Add the chicken and mushroom mix, then the cooked pasta; mix well. Add Parmesan and toss gently.
- Place mixture into a 9"x13" oven-proof dish and top with the additional Parmesan.
- Bake at 375 degrees F for approximately 20 minutes, or until the mixture is bubbling and brown.
