Cooking MethodSlow Cooker
Ingredients
- 1 can chickpeas, drained
- 1 package boneless skinless chicken breast, cut into bite-size pieces
- 4 carrots, sliced
- 3 red potatoes, diced but not peeled
- 1 onion, diced
- 1 red bell pepper, diced
- 1 can (14 ounces) diced tomatoes
- 1/2 cup celery, sliced
- 1 cup peas, fresh or frozen
- 2 cup broccoli florets, fresh or frozen
- 6 garlic cloves, diced
- 4 cup all-natural chicken broth
- 2 cup water
- 1 1/2 cup brown rice
- 2 cup baby spinach, chopped
- 2 teaspoon thyme
- 2 teaspoon black pepper
- 1 1/2 teaspoon salt
- 1/2 teaspoon red pepper
Instructions
- In a saucepan, cook the chicken, onions, peppers, and garlic in hot olive oil for 3 minutes on high heat.
- Add remaining ingredients to the pot and cook, covered, on medium-high heat for 30 to 40 minutes or until rice is cooked and tender.
Slow Cooker Directions: Follow steps 1 and 2, and then place ingredients in slow cooker. Cook on Low setting 6 hours, or High setting 3 hours.
