Chicken Skewers with Peanut Sauce

Ingredients

  • 12 ounce chicken breast, cut into bite-size pieces
  • 2 tablespoon vegetable oil
  • 2 tablespoon plus 2 Tbs. low-sodium soy sauce
  • 3 tablespoon creamy peanut butter
  • 1 tablespoon scallions (1-2 scallions), chopped
  • 2 tablespoon lime juice
  • 1 tablespoon honey
  • 4/5 tablespoon garlic powder
  • griddle (optional)
  • skewers

Instructions

  1. To make the dip, mix 2 tablespoons of soy sauce, peanut butter, scallions, lime juice, honey, and garlic powder until smooth.

  2. To make the chicken skewers: Marinate the chicken in two tablespoons of soy sauce and the vegetable oil for 20 minutes or overnight.

  3. Pat each piece dry before cooking.

  4. If you have a griddle: pat the chicken dry with a paper towel, skewer the pieces raw, and cook for two minutes on each side. Let the skewers hang over the edge of the griddle. Serve with the peanut dipping sauce.

  5. If you do not have a griddle, pat the chicken dry, cook the pieces for two minutes on each side in the frying pan, and skewer after it’s cooked. Serve with the peanut dipping sauce.
