Healthy Slow Cooker Chicken and Veggies

NotesYou can use any kind of potatoes, but red are the best.
Leave the peeling on the potatoes for added flavor and vitamins.
You can use chicken breasts or thighs instead of a whole chicken.

Ingredients
- 1 whole chicken
- 1 cup chicken broth
- 1 tablespoon olive oil
- 2 pound red potatoes
- 1 pound fresh green beans
- 1 teaspoon garlic salt
- 1 teaspoon Italian seasonings
- 1 teaspoon black pepper
- 1 teaspoon minced garlic
- 1 teaspoon salt

Clean the chicken and be sure to take out the giblets from the body cavity, then pat dry. Add chicken to the Crockpot and drizzle olive oil over the chicken.

Add the garlic and sprinkle the chicken with garlic salt, Italian Seasonings, and 1/8 teaspoon of black pepper.

Pour chicken broth around the sides being sure not to wash the seasoning off the chicken.

In a separate bowl, add potatoes and toss with 1/2 teaspoon salt and 1/8 teaspoon pepper, then add to Crockpot. Be sure they settle along the sides so you will have room for the green beans.

Add green beans on top of potatoes and add a pinch of salt and pepper to them.

Cook on high 4 hours, or on low for 7-8 hours
