Ingredients
- 4 boneless skinless whole chicken breasts
- 1 cup skim milk
- 4 tablespoon butter substitute or margarine
- 1/4 cup part-skim Parmesan cheese
- 1 cup part-skim mozzarella cheese
- 1 cup part-skim cheddar-jack cheese
- 2/3 cup reduced-fat Velveeta, cubed
- 1 yellow onion, minced
- 1 tablespoon garlic, minced
- 3 1/2 cup large potatoes, peeled and sliced
Instructions
- In slow cooker combine skim milk, butter substitute, cheeses, onion, garlic, and potatoes. Stir until potatoes are well-coated with cheese
- Add chicken on top, evenly spacing across cheese and potato mixture.
- Set slow cooker on low and heat for 6 hours, or set slow cooker on high and heat for 3 hours.
- Toss chicken breasts to coat.
- Add cornstarch, flour or arrowroot to thicken sauce if desired.
