Ingredients

  • SALAD
  • 5 cup lettuce
  • 2 cup skinless, boneless chicken breasts, chopped
  • 1 cup cherry tomatoes, halved
  • 1/2 avocado, peeled, cored, & sliced
  • 4 scallions, chopped
  • 1 can (15 ounces) chickpeas
  • 1 zucchini, sliced
  • 1/4 cup cup fresh cilantro, chopped
  • 1/4 cup whole-grain tortilla chips, crushed
  • DRESSING
  • 3/4 cup Greek Non-Fat plain yogurt
  • 1 tablespoon NuNaturals NuSteviaâ„¢ White Stevia Powderâ„¢
  • 1 tablespoon chili powder
  • 1 teaspoon ground cumin
  • 2 teaspoon balsamic vinegar
  • 3 teaspoon lemon juice
  • pinch sea salt and black pepper

Instructions

  1. For dressing, combine all dressing ingredients, mix well.

  2. For salad, combine all salad ingredients in large bowl.

  3. Drizzle prepared dressing over salad, gently toss to coat.

  4. Top with crushed tortilla chips and serve.
