Ingredients
- 1/2 cup Brummel & Brownâ„¢ butter substitute
- 1/2 cup unsweetened applesauce
- 3/4 cup NuNaturals NuStevia Sweetenerâ„¢ Stevia Baking Blend, or their MoreFiberâ„¢ Baking Blend
- 2 to 3 medium-sized, very ripe bananas, smashed
- 1/2 cup egg substitute
- 1 teaspoon vanilla extract
- 2 1/2 cups whole wheat flour
- 1/2 teaspoon baking soda
- 2 cups quick cooking oats
- 1 to 2 tablespoons unsweetened cocoa powder
- 1 cup semi-sweet chocolate chips
Instructions
- Preheat oven to 350 degrees and coat 2-3 baking sheets with non-stick cooking spray.
- In large mixing bowl, combine butter substitute and applesauce and beat with a mixer until creamy. The butter may still be somewhat chunky.
- Add the NuStevia Sweetener™, cocoa powder, smashed bananas, egg substitute & vanilla. Continue to beat until smooth and well combined.
- Gradually add the flour and baking soda & continue to beat until smooth. It will get be very thick and may be difficult toward the end.
- Once all of your flour is mixed in, stir in the oats & the chocolate chips. Your batter will be very thick, but this will make very chewy cookies.
- Drop the dough by the spoonful on the baking sheets and bake for approximately 10-12 minutes, until slightly brown. Do not overcook.
