Chocolate chip cookies never go out of style. This easy diabetic recipe is the gateway to heaven for everyone craving a soft and chewy cookie. Try these Diabetes Safe Chocolate Chip Cookies for a dessert everyone can enjoy.

Ingredients

  • 1/2 cup Rolled oats
  • 1/4 cup butter, softened
  • 1/2 teaspoon baking soda
  • 1/2 cup brown sugar (packed)
  • 4/5 teaspoon salt
  • 4 ounce plain nonfat yogurt
  • 1 egg
  • 1 teaspoon vanilla
  • 1 1/4 cup all-purpose flour
  • 1 cup semi-sweet chocolate chips

Instructions

  1. Toast oats on an ungreased baking sheet for 10 minutes at 375. Shake once during toasting. Remove from oven after 10 minutes.

  2. While the oats are toasting, make the cookie batter (or do as much as possible in 10 minutes).

  3. With an electric mixer, beat the butter until smooth.

  4. Add brown sugar and baking soda. Mix until smooth.

  5. Add salt, egg, vanilla, and yogurt. Mix until smooth.

  6. Add flour in small batches. Mix until smooth.

  7. When oats are finished toasting, put them in a blender, and process until they are a flour-like consistency.

  8. Add oat flour to cookie batter mixture. Stir with a wooden spoon until combined.

  9. Add chocolate chips. Stir with a wooden spoon until combined.

  10. Use a teaspoon measuring spoon to drop cookie dough onto an ungreased cookie sheet. This recipe makes 30 teaspoon-sized cookies.

  11. Bake at 375 for 9-12 minutes, or until bottoms are slightly browned.
