Ingredients
- 1/2 cup egg substitute, or egg whites
- 1 cup pure pumpkin
- 1 jar of baby food pureed prunes
- 2/3 cup NuNaturals NuStevia Sweetenerâ„¢ Baking Blend, or their MoreFiberâ„¢ Baking Blend
- 1/2 cup whole wheat white flour
- 1/2 cup wheat bran
- 1/2 cup soy protein powder
- 1/2 cup soy flour
- 1 teaspoon pure vanilla extract
- 1 teaspoon ginger
- 1 teaspoon baking powder
- 1 teaspoon baking soda
- 2 teaspoon cinnamon
- 1/4 teaspoon salt
- Raisins (optional)
- Nuts (optional)
Instructions
- Preheat oven to 300 degrees F.
- Mix the egg substitute, pumpkin, NuStevia™ Baking Blend, and prunes well.
- Add in the rest of the ingredients and mix until combined.
- Drop by rounded spoonfuls on to an ungreased cookie sheet. Use the back of a fork to flatten the cookies.
- Bake for 20 minutes.
