Walnut Rum Meringues
Impress your guests with these Walnut-Rum Meringues. Meringues are light, fluffy and easy to make. There is no butter in these simple sandwich cookies.

Ingredients
- 1 egg white
- 1/2 cup confectioner's sugar
- 2 teaspoon rum
- 1 teaspoon corn flour
- 2 ounce walnuts
Instructions
- Beat egg white until soft peaks form, gradually add sugar, beat until dissolved.
- Fold in finely chopped walnuts, sifted corn flour and rum.
- Drop half-teaspoonfuls of mixture on to well greased lightly-floured oven trays. Allow room for spreading. Bake in a 300 degree F oven 30 minutes.
