Slow Cooker Beef Short Ribs

Ingredients
- 3 1/2 pound lean beef short ribs
- 1 tablespoon vegetable oil
- 1 large onion, cut into wedges
- 1 1/4 cup water
- 1 cup ketchup
- 1/3 cup red wine vinegar
- 1 tablespoon paprika
- 1 teaspoon curry powder
- 1/2 teaspoon chili powder
- 1/2 teaspoon dry mustard
- 2 teaspoon salt
- 4 medium potatoes, peeled
- 4 medium carrots, pared and cubed
- 1 tablespoon cornstarch (optional)
Instructions
- Place all of the ingredients into your slow cooker, and stir to combine.
- Cook on low for 6 to 8 hours.
