Herbed Seafood Pasta

Try this healthy Herbed Seafood Pasta by Jarlsberg Lite as a tasty cold side option to your next dinner or lunch. For cold pasta salad recipes this one is very filling thanks to the added protein.

Ingredients

  • 2 tablespoon parsley, minced
  • 2 tablespoon dill, minced
  • 2 tablespoon chives, minced
  • 1 1/2 teaspoon dry mustard
  • 1/4 cup extra virgin olive oil
  • 1/2 pound tri-color rotini or spiral pasta
  • 2 cup Jarlsberg Lite cheese, shredded
  • 1 head fennel, sliced lengthwise in thin strips
  • 2 celery stalks, chopped
  • 2 peeled carrots, chopped
  • 1 pound crabmeat or surimi, cut in small chunks

Instructions

  1. In large bowl, mix herbs, mustard and oil.
     
  2. Boil pasta and 3 minutes before it’s cooked (al dente), add fennel, celery and carrots. Drain.
     
  3. Transfer pasta to large bowl; toss with dressing and crabmeat.
     
  4. Add cheese and toss again.
     
  5. Serve immediately or warm loosely covered in microwave.
