Loaded Chicken Pasta Salad
You just got invited to a summer barbecue but you have no idea what to bring. Quick, whip up this easy pasta salad recipe for Loaded Chicken Pasta Salad. It's a taste sensation perfect for a mini vacation.
Ingredients
- 1/4 cup low sodium chicken broth
- 1 cup chicken, cooked and cubed
- 2 cup broccoli, chopped into small florets
- 1 yellow or red pepper, diced
- 4 scallions, sliced
- 1 clove garlic, minced
- 1/4 pound fresh spinach leaves, removed of stems and torn into chunks
- 1 pound tricolor whole wheat fusilli, cooked and cooled
- 1 cup ripe tomatoes, chopped
- 1/4 cup basil, chopped
- 1/4 cup light olive oil
- 2 tablespoon balsamic vinegar or red wine vinegar
- 1/2 cup reduced fat Parmesan cheese, to taste
Instructions
- Heat broth in large nonstick skillet over medium-high heat. Add broccoli, pepper, scallions, and garlic. Stir until broccoli is just crisp tender, about five minutes.
- Remove broccoli mixture from heat and toss with fusilli and spinach.
- Mix in chicken, tomatoes, olive oil, and vinegar. If making a day ahead, refrigerate salad.
- Right before serving, add fresh basil and Parmesan cheese.
