Simple Fun Easter Cake

Ingredients
- 6 ounce sugar substitute
- 10 ounce white whole wheat flour
- 4 ounce butter substitute
- 4 egg whites, or egg substitute equivalent to 2 eggs
- 2 ounce walnuts, chopped
- 1 pinch salt
- 1 teaspoon baking powder
- 15 ounce skim milk
- chocolate icing (recipe below)
- small sugar-free Easter candies, for decoration
Instructions
- Preheat oven to 350 degrees F.
- Combine sugar substitute and butter substitute until creamy; beat in each egg white, one at a time.
- Blend in flour, salt and baking powder. Add walnuts and skim milk.
- Pour in to prepared pan and bake for an hour or until firm to touch.
- Cool completely before frosting.
Icing
- 3 ounces sugar-free powdered chocolate drink mix
- 10 ounces water
- 10 ounces icing sugar
- Stir the chocolate and water together in a saucepan and bring to a boil; let boil for 2 minutes.
- Stir in the sugar and let dissolve.
- After iced cake has set, decorate with sugar-free Easter candies if desired.
