Tomato and Pepper Egg White Omelette

Ingredients

  • 5 tomatoes, finely chopped
  • 7 fresh peppers, finely chopped
  • 8 egg whites
  • salt

Instructions

1. Spray pan with non-stick spray.

2. Cook the peppers until they start to soften. Add the tomatoes and cook for a few minutes. Add salt to taste.

3. Whisk the eggs together and pour over the tomatoes and peppers. Cook over low heat until the eggs are lightly set.
