Ingredients
- PIE CRUST (Makes 2)
- 2 cup raw pecans
- 2 cup Medjool dates, pitted, soaked for 1 hour
- Zest of one lemon
- 2 teaspoon Nama Shoyuâ„¢ (raw unpasteurized soy sauce)
- Nutmeg, freshly grated
- PIE FILLING
- 2 cup raw cashews, soaked
- 1 1/2 cup water
- 3/4 cup POM Wonderfulâ„¢ Pomegranate Arils
- 1 Packet of NuNaturals Nusteviaâ„¢ White Stevia Powder
- Dash of vanilla
- 2 crushed squares of Baker'sâ„¢ unsweetened baking chocolate
Instructions

PIE CRUST

Combine all ingredients in food processor & press into parchment-lined cake pans.

Allow the crusts to chill in the freezer for about 10 to 15 minutes as you make the pie filling.

PIE FILLING

Into your blender, soaked raw cashews, water, POM Wonderfulâ„¢ Pomegranate Arils (the botanical term for a seed surrounded by a juice sac), NuNaturals Nusteviaâ„¢ White Stevia Powder, dash of vanilla and blend.

PIE ASSEMBLY

Remove your pie crust from the pans and assemble pie.

In-between the 2 crusts, spread a layer of pie filling & top it with cherries, plus POMâ„¢ arils.

Place the other crust on top and cover it with another layer of filling, plus more Pom™ arils, and one crushed square of Baker’s™ unsweetened baking chocolate.
