Apple Bacon Quick Bread
A little bacon goes a long way in this Apple Bacon Quick Bread recipe. The result is an easy bread recipe with a hint of sweetness from the apples and onions and flecks of salty smoky bacon to offset that sweetness. The finished bread is not only great on its own, it also makes sandwiches that taste like dreams and French toast from the gods. Notes
A serrated knife works best to slice bread. If you’re not following a gluten free diet you can substitute the gluten free Bisquick by stirring together: (2 cups flour, 1 tbsp baking powder, 1 tsp baking soda, 1 tsp salt)

Ingredients
- 4 slices of bacon chopped into small pieces
- 1 medium apple, peeled and diced
- 1 medium onion, peeled and diced
- 3 eggs
- 1/3 cup milk
- 7 ounce low fat Greek yogurt
- 1/2 cup olive oil
- 2 cup gluten free Bisquick
Instructions

Preheat the oven to 400 degrees F and grease a 9 x 5 inch loaf pan.

In a medium sauté pan over a medium heat sauté the bacon until it just starts to develop some color then drain the excess grease.

Add the apples and onions to the pan and sauté for 5 to 7 minutes until they’re softened and begin to caramelize then remove the pan from the heat and set it aside to cool down as you mix the dough.

In a large bowl whisk together the eggs, milk, yogurt, and olive oil until well combined.

Add the Bisquick and mix until a soft dough forms. Add the apples onions and bacon and mix until they’re evenly dispersed throughout the dough.

Empty the dough into the prepared pan and smooth out the top.

Bake the bread for 50-55 or until golden and a tooth pick inserted comes out clean.

Let the bread cool in the pan for 10 minutes before removing it onto a baking rack to cool completely before slicing and serving.
