Ingredients
- 8 ounce soy veggie crumbles
- 2 large bell peppers, yellow or red
- 1/4 cup cheddar cheese
- 1/2 can black beans
- 1 ounce parsley
- Salt and pepper, to taste
- 2 tablespoon olive oil
- 1/4 cup salsa
Instructions
- Halve the two peppers and clean the insides. Set aside.
- In a large bowl, add the veggie crumbles, cheddar cheese in small cubes along with the black beans, one tablespoon of olive oil, salt and pepper and diced parsley.
- Toss all ingredients in the bowl. Stuff peppers with the mixture. Coat outside of pepper with remaining olive oil.
- Place peppers on grill and grill on medium heat for about 10 to12 minutes, or until mixture within the pepper is melted.
