Ingredients
- 2 whole chicken breasts, skinned
- 1 cup water
- 1 1/2 cup Pomi Strained Tomatoes
- 1 small onion, diced
- 1 small carrot, diced
- juice of 1 lemon
- 3 tablespoon olive oil
- salt and pepper, to taste
Instructions
- Simmer chicken breasts in water, tightly covered, with ¼ teaspoon salt, onion and celery until tender (about ½ hour), adding water if necessary.
- Cool, drain, remove bones and slice breasts. Mix the lemon juice with olive oil, ¼ teaspoon salt, pepper and Pomì.
- Pour a small portion of the sauce onto a platter, place the sliced chicken breasts on top and pour the remaining sauce over the chicken.
- Garnish with lettuce.
