Ingredients
- 1 large chicken
- 6 onions, chopped
- 1 bunch celery, chopped
- 1 pound mushrooms, chopped
- 1 green bell pepper, chopped
- 1 can (2 ounce) pimiento
- 1/4 pound butter
- 3 cup Pomi Chopped Tomatoes
- salt and pepper to taste
- 8 ounce dry rice
Instructions
- Half-cover chicken with water and boil until meat separates easily from bone.
- Cool slightly, remove skin and bones, and chop meat into small pieces. Save the broth.
- Sauté onions, celery, mushrooms, green pepper and pimento in butter until tender, then add Pomì, salt, pepper, and chicken.
- Cook the rice in boiling salted water.
- While the rice is cooking, preheat the oven to 375 degrees F.
- Drain rice and add to the chicken mixture. Bake for approx. 20-30 minutes.
