Mexican Beef Corn Bread

Ingredients
- 1 1/2 pound lean ground beef
- 1 1/2 cup self rising corn meal
- 1 16-ounce can yellow cream style corn
- 2 eggs
- 2 tablespoon bell pepper, chopped
- 2 tablespoon onion, chopped
- 3 jalapeno peppers
- 1 cup fat-free sour cream
- 2/3 cup fat-free cooking oil
- 1 1/2 cup reduced fat cheddar cheese, grated
Instructions
- Preheat oven to 325 degrees F.
- Brown beef and drain on to a stack of paper towels.
- In a large bowl, mix all other ingredients together.
- Add browned beef and mix.
- Place in one large or two small, pans greased with fat-free cooking spray.
- Bake at 325 degrees F for one hour, or until golden brown.
- Serve warm and enjoy!
