20 Minute Apple Cinnamon Muffins

Ingredients

  • 2 egg whites, or 1/4 cup egg substitute
  • 2 cup reduced fat Bisquick baking mix
  • 3/4 cup apple, peeled and finely chopped
  • 3 tablespoon sugar or sugar substitute
  • 2/3 cup skim milk
  • 1 tablespoon applesauce
  • 2 teaspoon cinnamon

Instructions

  1. Preheat oven to 400 degrees F.
     
  2. Lightly spray only the bottom of a 12-cup muffin pan with cooking spray.
     
  3. Beat egg whites (or shake egg substitute) slightly, stir in remaining ingredients just until moistened.
     
  4. Divide batter evenly among cups. Bake about 15 to 17 minutes, or until golden brown.
