Ingredients

  • 1 cup bran
  • 1 1/4 cup flour
  • 1 1/4 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1/4 cup vegetable oil
  • 1 cup apple juice (or other unsweetened fruit juice)
  • 1 egg, beaten
  • 1 tablespoon honey or fructose sugar

Instructions

  1. Mix dry ingredients in bowl.
     
  2. Add the rest of the ingredients; mix well.
     
  3. Bake in greased muffin pan at 350 degrees F for 7 to 12 minutes.
