Ingredients
- 2 1/4 cups whole wheat flour
- 1 1/2 teaspoon baking soda
- 1/3 cup brown sugar, packed
- 3/4 cup buttermilk, nonfat
- 1 1/2 cup apples, finely chopped
- 3 tablespoons liquid egg substitute
- 1 teaspoon vanilla extract
- 1/2 cup chopped dates
Instructions
- Preheat oven to 350 degrees F. Coat muffin cups with nonstick cooking spray.
- Combine the flour, baking soda and brown sugar; stir to mix well.
- Add the buttermilk, apples, egg substitute and vanilla extract; stir just until the dry ingredients are moistened. Fold in the dates.
- Fill the muffin cups 3/4 full with the batter. Bake for 16 to 18 minutes, or just until a toothpick inserted in the center comes out clean.
- Remove the muffin tin from the oven and allow it to sit for 5 minutes before removing the muffins. Serve warm or at room temperature.

This recipe need to be re-evaluated. The muffin dough was very thick and dry. I added more milk to the second batch and it was still gummy. Are 2-1/2 cups of whole-wheat flour too much? Should the amount of liquid be increased?
