Grandma da Vinci's Italian Mac and Cheese
Grandma da Vinci knows the best macaroni and cheese recipes, but she is also interested in looking her best. Luckily she is brilliant enough to allow the two to mix with this new healthier version of her famous recipe for baked macaroni and cheese, Italian style!

Ingredients
- 1 can reduced sodium tomato soup
- 1/2 cup water
- 1 1/2 cup low fat Monterey jack cheese, shredded
- 3 tablespoon low fat Parmesan cheese
- 2 teaspoon oregano
- 1 teaspoon fresh sweet basil
- 1 teaspoon garlic powder
- 1/2 teaspoon salt
- 1 teaspoon onion powder
- 2 cup elbow macaroni
Instructions
- Preheat oven to 400 degrees F.
- In a mixing bowl, stir all ingredients together until well blended.
- Place in a baking dish sprayed with fat-free cooking oil and top with butter substitute Italian style bread crumbs and 3 green pepper rings.
- Bake for 25 to 30 minutes until golden brown.
