Baked White Beans with Bacon

Ingredients

  • 1 package small white beans, sorted and soaked
  • 1 piece bacon, sliced
  • 1/2 cup light brown sugar
  • 1/2 cup reduced sugar ketchup
  • dry mustard
  • pepper

Instructions

  1. Either soak overnight in 8-10 times as much water or boil for one minute in above amount of water and let sit for an hour, rinse.
     
  2. In a 3 qt covered dish lay a layer of beans. Squirt ketchup over the beans. Sprinkle brown sugar. Lightly sprinkle dry mustard and pepper. Drop layer of bacon. Repeat until everything is used up. Add enough fresh water to cover everything by 1/8 inch.
     
  3. Cover dish, and set in 300 degree F oven. Two hours later, check the water level. One hour later, do the same. Check every hour or so, until about 5-6 hours have passed and they are done.

Sorting and soaking canned beans? Is a computer answering these questions? Seriously? It sounds good so I will just use my judgement on what the recipe is trying to accomplish.

I think there was a typing error in this recipe.The recipe calls for one can of small white beans sorted and soaked???I think it should be one small package? Which is it? I can't imagine cooking one small can of white beans for 5-6 hours?

I dont understand the 1 can small white beans, the only cans of white beans that I found was already cooked great northern or navy beans, if this is the ones you mean, then do you drain them and then soak them or what?
