Easy Cheesy Potato Salad
The addition of delicious, low fat Swiss cheese in Easy Cheesy Potato Salad adds an unconventional twist to a family favorite. This cheesy recipe puts classic potato salad recipes to shame.
Ingredients
- 1 pound red potatoes with skin, boiled
- 1/4 cup low fat French dressing
- 8 ounces low fat Swiss cheese, diced
- 1/2 cup celery heart, diced
- 4 hard boiled egg whites
- 3 tablespoons parsley, finely chopped
- 2 slices turkey bacon, crumbled
- 1/2 cup low fat mayonnaise
- 1 teaspoon dijon mustard
- salt and pepper to taste
- lettuce leaves, optional
Instructions
- Peel and dice the cooked potatoes with skin while warm. Sprinkle lightly with low fat French dressing, set aside to cool.
- In a mixing bowl combine the potatoes, low fat Swiss cheese, scallions, celery, egg whites from three eggs chopped, 2 tablespoons of parsley and the crumbled turkey bacon.
- Mix the low fat mayonnaise and mustard, add to salad. Toss gently but thoroughly.
- Season to taste with salt and pepper, cover and chill.
- To serve, mound the salad in a bowl lined with the lettuce leaves (optional), sprinkle the top with remaining parsley and the remaining egg whites, finely chopped
