Potluck Potato Salad with Beer

Looking for one of the most delicious potato salads? Try this one. We bring it to potluck parties and picnics all the time, and it tastes great. The secret is in the beer.

Ingredients

  • 3 pound potatoes
  • 2 cup diced celery
  • 1 small onion, chopped
  • salt, to taste
  • 1 cup fat-free mayonnaise
  • 2 tablespoon prepared mustard
  • 1/4 tablespoon hot pepper sauce
  • 1/2 cup beer
  • 2 tablespoon chopped parsley

Instructions

  1. Cook potatoes in skins until tender (bake about an hour at 350 degrees F).
     
  2. When cool, peel and dice.
     
  3. Add celery and onion and season to taste with salt.
     
  4. Blend mayonnaise with mustard and hot pepper sauce; gradually stir in beer. Add parsley.
     
  5. Pour over potato mixture. Mix lightly with fork. Chill.
