Tex-Mex Potato Salad with Chicken

Ingredients
- 2 ripe tomatoes, chopped
- 3/4 cup green onions, chopped
- 1/4 cup fresh cilantro, chopped
- 2 tablespoon fresh jalapeno peppers, chopped
- 1 cup low fat mayonnaise or fat free salad dressing
- 3 tablespoon fresh lime juice
- 1 teaspoon chili powder
- 1 teaspoon ground cumin
- 2 pound small red potatoes with skin, cooked and sliced 1/4 inch thick
- 2 cup cooked chicken without excess skin or fat, shredded
- 1 large red bell pepper, diced
Instructions
- In a bowl, combine the tomatoes, onions, fresh cilantro and jalapeno peppers. Mix well, set aside.
- In small bowl, combine the low fat mayonnaise or fat free salad dressing, fresh squeezed lime juice, chili powder and cumin; mix well.
- In a third bowl, combine the potatoes with skin, chicken without excess fat or skin, and red bell pepper and stir.
- Toss with the low fat mayonnaise dressing and the tomato mixture.
- Cover and chill for at least 1 hour. Serve with low sodium tortilla chips, if desired.
