Lucy's Low Fat Caesar Dressing
Lucy loves the creaminess of this low fat Caesar dressing recipe, without all the calories of regular Caesar dressing. Pour it over your favorite salad mix and your lunch-on-the-go is ready!

This recipe yields 1 1/2 cups of salad dressing.
Ingredients
- 1/2 cup buttermilk
- 1/2 cup nonfat plain yogurt
- 1/4 cup parmesan cheese, freshly grated, about 3/4-oz
- 1/4 cup lemon juice, fresh
- 2 shallots, chopped
- 3 cloves garlic, minced
- 3 anchovy filets, drained and minced
- 2 teaspoons lemon peel, grated
- 1 teaspoon fresh oregano, chopped
- 1 pinch Worcestershire sauce (generous)
Instructions
- Combine all ingredients in blender and blend until creamy.
- Season to taste with salt and pepper.
- Can be prepared 3 days ahead. Cover and refrigerate. Bring to room temp before using
