Ambrosia Waldorf Salad

If you want a healthy lunch idea, try this fruit salad recipe. This Ambrosia Waldorf salad is a quick, easy option for any picnic, party, or simply to enjoy at lunch or dinner.

Ingredients

  • 2 cup cranberry halves, fresh or frozen
  • 1/2 cup sugar substitute
  • 3 cup miniature marshmallows
  • 2 cup apples, unpeeled and diced
  • 1 cup green grapes, cut in halves
  • 1 can (20-ounce) pineapple pieces, drained
  • 3/4 cup black walnuts
  • 4 cup Cool Whip Free
  • 1 cup coconut, shredded or flaked

Instructions

  1. Combine cranberries and sugar substitute in medium bowl.
     
  2. In a large bowl, combine the marshmallows, apples, grapes and pineapples.
     
  3. Add cranberry mixture and black walnuts and mix well.
     
  4. Add Cool Whip Free.
     
  5. Cover and chill.
     
  6. Sprinkle with coconut before serving.
