Pasta Salad Mediterranean
Loving salads is always a good thing since it's healthy for you. Try a different kind of salad - a Mediterranean pasta salad.
Ingredients
- 6 to 8 servings of pasta, cooked and drained (penne, rigatoni, bows)
- Cucumber, chopped (to taste)
- Red onion, sliced or chopped
- Mixed green and black brine cure olives, pitted
- Sundried tomatoes, softened or fresh ripe tomatoes, chopped
- Fresh basil leaves
- Fresh feta cheese, crumbled
- Marinated artichoke hearts, chopped
Instructions
- To create the salad, simply combine all of the ingredients in a bowl or another container.
- Chill well and stir before serving.
- Dressing: either liquid from the marinated artichokes to moisten well or splash on extra virgin olive oil, red wine vinegar, minced garlic, salt and fresh grated black pepper.
