Serves4
Cooking Time15 min
Ingredients
- 1 can tuna
- 5 cup Romaine lettuce
- 6 ounce green beans
- 2 eggs, hard boiled
- 1 can garbanzo beans
- 2 tablespoon black olives
- 1 1/2 tablespoon Dijon mustard
- 1 lemon
- 1 pinch thyme leaves
- 1 pinch oregano
- 1 pinch basil leaves
- 1/2 tablespoon olive oil
- 10 grape tomatoes
Instructions
- First up set a pot of water to boil.
- While you're waiting for the water to come to a boil you can start on your dressing. The juice of 1 lemon, Dijon mustard, a pinch of basil leaves, thyme and oregano should be combined in a meauring cup or glass bowl. Once your ingredients are mixed together drizzle about half a tablespoon of olive oil in. You want just enough to round out the flavors.
- Once your pot of water has come to a boil go ahead and add your green beans. Let them boil for 3 minutes. After 3 minutes you'll want to stop the cooking process by eating putting them in an ice bath or by draining your green beans and spraying them down with cold water.
- Now it's time to assemble your salad. In a salad bowl add some chopped romaine, your grape tomatoes that you've halved, 2 tablespoons of black olives, a can of drained chickpeas and hard boiled eggs that you've quartered. Also, add your drained green beans.
- Drizzle your salad dressing and plate up. Once you have your salad on your plates place on top of your salad a half a can of tuna onto each plate. Serve and enjoy.
