Spicy Mexican Slaw
With the Latin flavors of cumin, cilantro, and jalapeno, this Spicy Mexican Slaw does not skimp on flavor! Nevertheless, low-fat milk and mayonnaise in small quantities make this a healthy coleslaw dressing.
Ingredients
- 2 tablespoons light mayonnaise
- 1 tablespoon skim milk
- 1/2 teaspoon fresh jalapeno pepper, finely chopped
- 1 tablespoon cilantro leaves, chopped
- 1/2 teaspoon cumin
- 1 6-ounce piece of cabbage (about 1/4 head)
- 1 large carrot
- 1 scallion
Instructions
- Blend mayonnaise, milk, jalapeno, cilantro, and cumin in a large bowl.
- Slice cabbage thinly and julienne carrot. Cut scallion on the bias into thin slices.
- Stir cabbage, carrot, and scallion into dressing, and salt and pepper to taste.
