Sunflower Slaw

Ingredients
- 1/4 cup sunflower seeds
- 1/8 cup sesame seeds
- 8 cups green cabbage, finely shredded
- 1/2 cup red bell pepper, finely chopped
- 3 tablespoons light vegetable oil
- 2 teaspoons lemon juice
- 1 tablespoon apple cider vinegar
- 1 teaspoon honey
- 1 teaspoon artificial sweetener (try an equivalent amount of agave nectar)
- fresh ground pepper to taste
- salt to taste
Instructions
- Toast sunflower and sesame seeds in a dry skillet or toaster oven over medium heat. Stir or shake often. Seeds will brown and start to pop in about 2 to 3 minutes.
- Combine toasted seeds with cabbage and red pepper.
- Blend cabbage mixture with vegetable oil, lemon juice, apple cider vinegar, honey, and agave. Stir to coat and salt and pepper to taste.
