Veggie Garden Coleslaw
Forget your old coleslaw recipe; this is how to make coleslaw well. Veggie Garden Coleslaw is a no mayo coleslaw recipe packed with 6 vegetables and herbs and seasoned with hints of caraway, honey, apple cider vinegar, mustard, and soy sauce.
Ingredients
- 2 tablespoon balsamic vinegar
- 6 tablespoon apple cider vinegar
- 2 tablespoon dijon mustard
- 1 tablespoon low-sodium soy sauce
- 2 teaspoon honey
- 1/2 teaspoon celery seed
- 1/2 teaspoon caraway
- 1/4 teaspoon freshly ground pepper
- 2 cup green cabbage, shredded
- 2 cup red cabbage, shredded
- 1 carrot, julienned
- 1/2 green pepper, thinly sliced
- 1/2 yellow pepper, thinly sliced
- 1/4 cup green onions, thinly sliced
- 1/4 cup fresh parsley, finely chopped
Instructions
- Whisk balsamic vinegar, apple cider vinegar, dijon mustard, soy sauce, honey, celery seed, caraway, and pepper together in a small bowl. Set aside.
- Toss green cabbage, red cabbage, carrot, green pepper, yellow pepper, green onions, and parsley in a large bowl.
- Pour dressing over slaw and mix until coated evenly.
- Allow slaw to marinate for at least 1 hour in the refrigerator before serving.
