Zippy Italian Coleslaw
Zippy Italian Coleslaw is the best coleslaw for your diet! With a variety of crunchy vegetables and a tasty, healthy coleslaw dressing, you can't go wrong! This no mayo coleslaw recipe cuts down on mayonnaise and refined sugar in a big way.

You may make this coleslaw up to 3 days ahead and refrigerate.
Ingredients
- 6 cup cabbage, coarsely chopped
- 1 cup red onion, diced
- 8 ounce cherry tomatoes, cut in half
- 3/4 cup celery, diced
- 1/2 cup red bell pepper, chopped
- 3/4 cup pimento-stuffed green olives, chopped
- 3/4 cup black olives, coarsely chopped
- broccoli, cut in bite-size pieces (optional)
- cauliflower, cut in bite-size pieces (optional)
- 1/3 cup light Italian dressing
Instructions
- Combine all vegetables in a large, resealable plastic bag.
- Pour Italian dressing into bag and shake bag to distribute dressing.
- Refrigerate for at least 6 hours before serving to allow the flavors to meld.
