Healthy Vegetable Pockets

Light cream cheese, seeds and fresh vegetables combine in this whole-wheat pita for a super-healthy sandwich choice. This is a perfect meal to take to work.

Ingredients

  • 8 ounce Fat-free cream cheese spread
  • 1/4 cup sunflower seeds
  • 1 teaspoon seasoned salt
  • 4 whole wheat pita bread, halved
  • 1 medium tomato, thinly sliced
  • 1 medium cucumber, thinly sliced
  • 1 cup sliced fresh mushrooms
  • 1 ripe avocado, peeled and sliced

Instructions

  1. In a bowl, combine the cream cheese, sunflower seeds and seasoned salt.
     
  2. Spread about 2 tablespoons on the inside of each pita half.
     
  3. Layer with tomatoes, cucumber, mushrooms and avocado.
